Thinking about a ‘conical’ design Fermenter?   Let’s Talk!

Many brewers believe that beer that sits on dead yeast acquires ‘off flavors’.  However,  it’s been shown by beer judges that ‘off-flavors’ don’t even begin to occur for at least 5-7 weeks.   Even then,  it’s been concluded that some of these changes are beneficial.

Many brewers believe that a conical will cleanly remove the dead yeast by dumping it away from the clear beer above.  Unfortunately, dumping yeast does not remove all of it… just some of it.  The rest sticks to the cone sides and your beer remains in contact with residual dead yeast.  To add insult to injury,  the action of dumping yeast puts a nice plume of dead yeast haze into the product that was previously clear!

Many brewers see conical fermenters on rollers and assume they are easy to handle and clean.   Actually because of the cone bottom, legs were needed to protect the vulnerable hardware below.  For this reason a 15 gal. conical is nearly twice the size necessary to do the job.  Dis-assembly is cumbersome,  the lid is large, the clamps are many and the gasketing can be damaged easily.  When fillied,  they become top heavy and possibly dangerous.   They’re heavy and bulky.  You won’t want to pick one up and move them to refrigeration.

  • Connect your Tri-Clamp hose from the racking arm outlet to your target vessel for transfer of clear beer via an adjustable internal racking arm/elbow. This too, is Tri-Clamp sanitary and easily removable for cleaning ! Notice yet another stainless, sanitary Ball-Valve on the racking arm outlet
  • For those wishing to capture yeast for culturing, after “clear-beer” transfer, simply leave a little amount of clear beer on top of the yeast to create a more liquid yeast “slurry.” Then connect the same Tri-Clamp hose to your yeast propagator vessel, turn the internal racking arm downward, add a little pressure thru the lid ball-valve and gently push the majority of yeast into your target vessel in a completely “closed environment” way
  • Easily disconnect all ‘Tri-Clamp’ components (hose, lid, siphon & thermometer) for easy sink clean-up. (This is sanitary made simple!) 
  • Wondering how easy the vessel is to clean. Very! A simple short-handled brush does the trick and then you can do something that guarantees a “sterile” environment… Steam sanitize it by putting a little water in the bottom, then making some steam by using any burner. Let’s see you do this with a conical! 
  • Don’t be fooled when others suggest that weldless fittings are an advantage. Read more here
  • Even the thermometer is installed using a 1″ sanitary Tri-Clamp so there are no threads to clean
